Cold weather makes me so ready for SOUP! One of my favorite recipes is this yummy tomato soup. It’s got plenty of anti-oxidants from the garlic and tomatoes. It’s way low-fat because I use buttermilk instead of heavy cream, and it has a robust flavor from garlic and fresh basil.
I can’t remember if I found this recipe or just made it up, but here’s the gist of it:
1 giant can of crushed tomatoes, 28 ounces
1 1/2 C. low-fat buttermilk
4 T. chopped fresh basil
1 garlic clove, chopped and crushed
1 T. Italian seasoning
spray of olive oil
salt and pepper to taste
Makes 4 servings. One serving = 182 calories, 32.5 grams of carbs, 8 grams of dietary fiber, 20.5 grams sugar, 12 grams of protein.
Spray a 4 quart sauce pan with olive oil while over low heat, add the crushed garlic, heating lightly until you can smell the fragrance of the garlic then add the Italian seasoning and briefly heat. Pour in the crushed tomatoes and buttermilk. Add basil. Bring to a simmer. Salt and pepper to taste.
Yum. If you want to make it a complete meal add some chopped pre-cooked chicken breast or 97% fat-free ground beef.
